They’re a versatile treat that works as a breakfast side alongside bacon and eggs, served at the dinner table with a cozy pot of chili, or eaten any time as a decadent snack! These corn muffins are so easy to make and are sure to have your mouth watering.
Ingredients:
2 large eggs
2 tbsp honey
¾ cup whole milk
1 ¼ cups all-purpose flour
¾ cup yellow cornmeal
2 tbsp sugar
1 tbsp baking powder
1 tsp salt
1 stick unsalted butter, melted and cooled
3 strips of bacon, fried and crumbled
1 stick butter, melted (for honey butter)
½ cup honey (for honey butter)

Directions:
Mix 2 tablespoons of honey, the whole milk, and the eggs in a bowl until combined. Then, set the bowl aside.
In a separate bowl, mix the flour, cornmeal, sugar, baking powder, and salt. Then, add in the milk mixture and the melted and cooled unsalted butter, and stir to combine.
Spoon the batter evenly into a prepared muffin pan, filling each cup about ¾ full. Then, top with the crumbled bacon and bake for 17 minutes at 350 degrees Fahrenheit.
While the muffins bake, mix together the melted unsalted butter and honey to make honey butter.
Drizzle the honey butter on top of the muffins and serve!
