To make it, just layer avocados, salsa, lemon juice, sour cream, cheese, tomatoes, olives and scallions in a bowl, and you’re ready to dig in!
This healthy corn salad is a great way to balance out the menu at a meat-heavy Labor Day cookout. To make it, start by cooking up some couscous. Then, pan-roast a can of corn with olive oil, salt and pepper.
