Many store-bought dressings are loaded with processed ingredients, preservatives and sugar, so making your own dressings at home is generally a healthier option. Plus, it’s usually cheaper! Once you start making your own salad dressings, you’ll figure out what ratios you like best, and the process quickly becomes much easier.

Salads are best when they have high-quality and delicious — yet simple! — dressing. Yes, the greens are important, but if you have a great dressing, it will completely up your salad game. I could practically live on salads because I love them so much — and that’s usually because of the dressings I use.

Now that it’s springtime and soon to be summer, when fresh, vibrant produce is more abundantly available, chances are you’ll be more in the salad mood in the coming months.

Below are three of my go-to salad dressing recipes that are all super easy to make. From a creamy coconut dressing to a cilantro lime moment and a zesty tahini-based dressing, all three pair well with roasted root veggies, white meat and any leafy greens.

Directions for all three dressings are below:

1. Add all the ingredients into a blender and blend until smooth. Add water to thin it out if needed.
2. You may also combine the ingredients without blending: Simply add everything to a mason jar and shake it until all of the ingredients are well combined.
