These salmon lettuce wraps are packed with flavor

If your fridge is packed with too much fresh produce for you to handle, wrap up your worries with this delicious salmon lettuce wrap!

This recipe is the perfect way to make sure your veggies are being put to good use. The low-carb wraps are packed with salmon, a delicious slaw made from veggies and fresh herbs, and a flavorful marinade made from fresh-squeezed juice. It’s a light, simple dish that’ll turn your summer guests into repeat customers.

Ingredients

  • 1 pound of salmon

  • Salt & pepper to taste

  • 6 large leaves of butter lettuce

Dressing for the salmon

  • 1 tablespoon of honey

  • 1 tablespoon of soy sauce

  • 1 teaspoon of grated ginger

Slaw

  • ½ red onion, julienned

  • ½ bulb of fennel, julienned

  • 1 cup cucumber, cubed

Marinade

  • Salt & pepper to taste

Instructions

1. Season salmon with salt and pepper

2. Cook salmon for 4 minutes on each side on a cast iron frying pan with olive oil.

3. Start making the slaw. Add the cucumber, fennel, red onion and cilantro into a large mixing bowl.

4. Add salt, pepper, fresh-squeezed lemon juice, and fresh-squeezed orange juice to the slaw and mix until the veggies are covered.

5. Once the salmon is cool enough to touch, use forks to break the salmon apart into large flakes.

6. Add the honey, soy sauce, grated ginger, and lemon zest to the salmon and mix it up

7. Arrange the lettuce wraps on a serving dish

8. Add a few chunks of salmon and a large spoonful of slaw to each lettuce wrap. Garnish with fresh cilantro, wrap it up and enjoy!
