This pesto grilled cheese is a flavorful twist on a classic

Grilled cheese sandwiches and Caprese salads are two classic recipes that are unstoppably delicious when combined. Made with fresh mozzarella, pesto, and sun-dried tomatoes sandwiched between two slices of ciabatta bread, this Italian-American fusion is sure to become a regular in your meal rotation. If you’re looking for a new take on two staples, try this recipe for pesto grilled cheese!

Ingredients

  • 1 tbsp pesto sauce

  • 6-8 slices fresh mozzarella

  • Sun-dried tomatoes, reconstituted and chopped

  • 1 tbsp softened butter

  • 4 slices ciabatta bread

  1. Spread pesto sauce on four slices of ciabatta bread.

  2. Place 3-4 slices of mozzarella cheese on two pieces of bread (6-8 total), followed by the sun-dried tomatoes.

  3. Close the sandwiches by placing the pesto-only bread slices on top of the mozzarella and sun-dried tomato ones.

  4. Spread butter over the top side of the bread, then place the sandwiches on the panini press with the buttered sides down.

  5. Spread butter on the opposite sides of the bread.

  6. Toast the sandwiches on the panini press for approximately 5 minutes on each side or until both sides are golden brown and the cheese has melted.

  7. Slice each sandwich in half and enjoy!
