Ingredients

  • 2 eggs

  • ¾ cup granulated sugar

  • 1 tsp grated lemon zest

  • 1 tsp vanilla extract

  • ½ cup melted butter

  • ½ tsp salt

  • 1 ¾ cup all-purpose flour

  • 1 cup white chocolate chips

  • ½ cup lemon curd

  • 1 cup powdered sugar

  • 3 tbsp lemon juice

  1. Whisk together eggs, granulated sugar, lemon zest, vanilla extract, and melted butter in a large mixing bowl.

  2. Add salt and all-purpose flour, then thoroughly combine to form a dough before folding in white chocolate chips.

  3. Spread half of the dough into a loaf pan lined with parchment paper and add four 1-tablespoon drops of lemon curd throughout the batter.

  4. Add the remaining batter, then top with the rest of the lemon curd.

  5. Swirl the curd throughout the batter by making figure 8 patterns with a knife.

  6. Bake at 350 degrees Fahrenheit for 55-65 minutes, then remove from the loaf pan and let it cool while preparing the glaze.

  7. Make the glaze by whisking together powdered sugar and lemon juice in a small bowl until smooth.

  8. Finally, drizzle the glaze over the loaf of bread, allowing it to set completely before slicing.
