Ingredients

  • 3 lbs chicken wings

  • 2 tsps kosher salt

  • 6 garlic cloves, coarsely chopped

  • 1 2-inch piece of fresh ginger, peeled and coarsely chopped

  • 1 cup plus 1/2 tbsp reduced-sodium soy sauce

  • 1/4 cup gochujang (Korean hot pepper paste)

  • 1/4 cup light brown sugar

  • 2 tbsps fresh lemon juice

  • 2 tbsps honey

  • 2 tbsps rice wine

  • 2 tbsps unseasoned rice vinegar

  • 1 tsp freshly ground black pepper

  • 1/4 cup flour

  • Scallions, sliced (for garnish)

Directions

  1. Season chicken wings with salt, cover, and chill in the fridge for at least 8 hours and up to 1 day.

  2. Air fry the wings in batches (about 6 at a time) at 425 degrees Fahrenheit for 25 minutes.

  3. Bring garlic, ginger, soy sauce, gochujang, brown sugar, lemon, honey, wine, vinegar, and pepper to a boil in a medium saucepan over medium-high heat. Reduce heat, and simmer, stirring occasionally, until slightly thickened (about 5 minutes).

  4. Add cooked wings to the pot of thickened sauce and stir to coat evenly. Transfer to a serving plate and garnish with sliced scallions.
