These ground turkey stuffed mini peppers are perfect for weeknights

Craving a hearty dinner that’s easy and inexpensive to make? Try these ground turkey stuffed mini peppers! They make the perfect weeknight dinner, and the leftovers are ideal for single-serving snacks. Grab your cast iron pan, a handful of basic ingredients, and get cooking! Your stomach will thank you.

Ingredients:

  • 1 tbsp olive oil

  • 1 yellow onion, chopped

  • 4 oz mushrooms, finely chopped

  • ½ lb ground turkey

  • 1 cup cooked white rice

  • 24 oz marinara sauce, divided

  • 1 tbsp salt

  • 1 tsp black pepper

  • 8 oz mini bell peppers, halved and deseeded

  • 1 ½ cup shredded mozzarella cheese

Directions:

  1. Heat olive oil in a cast iron pan, then add the chopped onions and sauté until they begin to become translucent. Then, add in the chopped mushrooms and cook until brown.

  2. Add the ground turkey and heat until cooked through, then mix in the cooked white rice, half of the marinara sauce, salt, and black pepper. Set aside.

  3. In a baking dish, add the other half of the marinara sauce, then stir in ½ to ¾ cup of water.

  4. Stuff the bell peppers with the ground turkey filling, then place them in the baking dish on top of the marinara sauce. Top the peppers with shredded mozzarella cheese.

  5. Bake the peppers in the oven at 375 degrees Fahrenheit for 30 to 40 minutes, then let cool and serve!
