Food influencer whips up delicious meal for double-date dinner at home

On this episode of In The Know Eats: Dinner Party, food influencer Skyler Bouchard Oppenheim (@diningwithskyler) welcomes us into her Philadelphia, Pennsylvania home as she prepares an “Italian-American-European fusion” menu for an intimate dinner double date with her friends and husband, Sebastian.

Skyler shares that she gets meal inspiration from going to the market, and this particular visit inspired her to put together a cheese board, a “crudités-style” cold broccolini and asparagus salad, and balsamic ribeye steaks.

After prepping the salad ahead of time, Skyler gets to work on the cheese board. The food influencer explains that she likes to mix different textures of cheeses when it comes to assembling a board. This cheese board includes a Gouda cheese from Holland, a Pennsylvania cheese called Bamboozle that’s “kind of like a mozzarella, but softer,” a cubed hard cheese, and a creamy Vermont cheese that becomes the centerpiece of the board. Skyler fills out the board with cured meats, bread, crackers, and various fillers like cornichon pickles, and olives.

On to the main course: the ribeye steaks. Skyler removes the steaks from their balsamic marinade and sprinkles some salt and pepper on them before throwing them on the grill. Once cooked, she lets the steaks rest for about 10 minutes to allow the juices to “redistribute,” and then cuts them into slices and pours some of the jus on top.

As soon as the guests arrive, it’s time to pour the wine! Skyler is a level 3 sommelier, so she knows her stuff. She pairs their meal with a Sonoma Chardonnay from Russian River Valley, California, and a Washington State Cabernet Sauvignon. “It’s my favorite region for [Cabernet] in the U.S.,” admits Skyler.

Skyler’s guests raved about everything from the cheese board to the steaks. “I think the more it sits in the sauce, it tastes better,” remarked one guest about the ribeyes. After Skyler admitted she was nervous about the steaks, her friend reassured her saying, “You made it look so easy.”
